Cozy Japanese Beef & Rice Bowl: Easy Weeknight Comfort Food

When I first made it, I had almost no expectations because the sauce is honestly so simple. But after one bite, it instantly became a staple in our home. Now itâs one of those comfort bowls my boyfriend asks for on repeat, especially on busy weeknights when we want something cozy, savory, and grounding without spending forever in the kitchen. This Japanese beef bowl, also known as gyudon, is warm rice, tender beef, a sweet and salty sauce, and a jammy egg that ties everything together. Itâs simple food that somehow feels like a hug. I love seeing how far my little comfort bowls travel Ingredients (serves 2): ⢠200g beef sirloin, sliced into thin strips ⢠4 tbsp light soy sauce ⢠4 tbsp cane sugar ⢠4 garlic cloves, minced ⢠½ large white onion, thinly sliced ⢠1 tbsp unsalted butter ⢠1 scallion, green parts sliced ⢠125g basmati rice ⢠2 eggs, soft boiled ⢠Sesame seeds, for garnish Directions: 1. Slice the beef sirloin into long, thin strips. Ribeye also works if thatâs what you have. 2. In a bowl, marinate the beef with soy sauce, cane sugar, and minced garlic. Toss well and let sit for about 30 minutes. 3. Thinly slice the white onion and separate the layers. Slice the green parts of the scallion and set aside for topping. 4. Heat a pan over medium-high heat and add the butter. SautĂŠ the onions for about 5 minutes until lightly browned and soft. 5. Meanwhile, cook the rice according to package instructions. When the rice has about 6 minutes left, add the eggs to boiling water and cook for 6 minutes for soft, runny yolks. Strain and cool the eggs. 6. Turn the heat to high and add the marinated beef to the onions. Fry for 2 to 3 minutes only, until lightly browned and still very tender. 7.
