This is how to make a delicious Nigerian coconut party jollof 12 cups rice (milk Tin cup) 420 gram tomato paste (2 medium size tin) and 3 satchet tomato paste Tomatoes & Pepper Mix *10-12 tomato paste 20-30 small scotch bonnet pepper 5-6 bell peppers 8-10 cayenne (shombo) 4 onions 2-3 medium size coconut (extract 4-6 cups coconut milk) 1-2 tbspn curry powder 1-2 tbspn thyme 2 tbspn ginger Ginger/garlic paste 3-4 chicken/ stock 1 & 1/2 cup vegetable oil 5-7 seasoning cubes (to taste) Salt to taste) Finish with tomato slices Onions Margarine. You can double or divide the ingredients depending on the quantity you are making.
